Bilberry

Berry Appearance: Bilberries are small, edible, nearly black berries, often with a slight purple tinge. Unlike American blueberries, which grow in clusters and have a light-colored pulp, bilberries grow singly or in pairs on the bush. Pulp and Staining: The most distinguishing feature of the bilberry is its interior: the flesh is a deep red or purple color throughout (darker than a blueberry), which is due to a high concentration of antioxidant compounds called anthocyanins. This dark pulp readily stains the fingers, lips, and tongue when eaten. Culinary Use: Bilberries are primarily collected from wild plants (as they are difficult to cultivate) and are used to make jams, juices, pies, liqueurs, and other desserts.
