Appearance: Ambarella fruit is oval-shaped, typically 6–9 cm (2.4–3.5 in) long, and grows in bunches. The skin is thin but tough, green when unripe, and turns a golden-yellow color when ripe. Flesh and Core: When firm, the flesh is crisp, juicy, and subacid, with a pleasant, somewhat pineapple-like fragrance and flavor. The most notable feature is the large, hard, woody core in the center, which is covered with tough, spiky fibers that extend into the surrounding pulp, making it difficult to slice or eat completely. Usage: It can be eaten both ripe and unripe. The unripe, tart green fruit is often eaten with salt, sugar, or chili, and is used in salads, pickles, and chutneys. The ripe fruit is enjoyed fresh or made into juices, jams, and preserves.
